Delicious and Easy Mini Quiches

These delicious and easy mini quiches are my son’s favourite! My 6 year old loves to help cook and this is a great recipe for kids to help out in the kitchen. They make for easy school lunches too. Makes 24 quiches.

Ingredients for your delicious and easy mini quiches

  • 6 x sheets of Puff Pastry, defrosted
  • 10 x extra large eggs
  • 200g triple smoked ham, roughly chopped
  • 600g thickened cream
  • 500g Mozzarella Cheese
  • Pinch of Salt
  • Pepper
  • Olive oil spray
  • Any other add-ins (onion, capsicum, mushroom) – optional

Directions for your delicious and easy mini quiches

Preheat oven to 180c (365f). Prepare two muffin trays by spraying well with olive oil and set aside.

In a bowl, whisk eggs together. Mix thickened cream into eggs. Add salt and pepper. Set bowl aside.

Using a ramekin or cup as a template, cut circles out of pastry. You will manage to cut four circles out of each pastry sheet.

Place pastry into muffin tray holes. The top of the pastry should sit just above the muffin tray.

Once you’ve placed all the pastry into the muffin trays, pour egg mixture into each pastry mould slightly over halfway. You can add more mixture to top up later if needed, remembering the quiches will rise in the oven.

Next, add the ham and mozzarella cheese into the egg mixture. At this point you could also add any other add-ins you like. For example, onion, capsicum, mushroom.

Pop these delicious and easy mini quiches into the pre-heated 180c oven and bake for 20-25 minutes or until the tops of the quiches have browned and risen.

Remove from the oven. Once slightly cooled, gently remove from muffin trays and place on a cooling rack. Once cooled slightly, enjoy straight from the oven! These quiches also freeze really well in sealed containers / clip lock bags.

Enjoy!! These won’t last long!
