Healthy 3 ingredient pancakes

These super quick and easy healthy 3 ingredient pancakes have no refined sugar so are actually good for you! Are you looking for healthy snacks for your kids after school or to include in lunchboxes? These are a winner! They are also quick enough to prepare in the morning to include in school lunchboxes. My son loves to help out in the kitchen and this is the perfect recipe to have your kids get involved. Shout out to my gorgeous cousin who shared this recipe with me.

Ingredients

  • 2 medium overripe bananas
  • 1/2 cup rolled oats
  • 2 eggs
  • 1 tbs honey (optional)
  • Olive oil or coconut oil for frying

Directions for these healthy 3 ingredient pancakes

Preparation time: 5 min
Cooking time: 10 min
Makes: 12 medium sized pancakes

In a blender, mix rolled oats until blended well. Add bananas, eggs and honey (if you’re using). Blend on medium speed until mixed well.

Add a touch of olive oil or coconut oil to non-stick frypan and set heat to medium. Once pan is heated, add a spoonful of the pancake batter.

Wait for the pancakes to cook. When there are a few tiny bubbles, flip the pancakes over. Pancakes should be golden brown. Wait another minute and remove the pancakes out of the pan.

Enjoy drizzled with maple syrup with chopped strawberries and banana or just as they are! They are delicious.

A cute idea is to use different shaped cookie cutters to cut out the pancakes when ready to make them exciting for school lunchboxes.
